I have 2g maf (609) on my car right now. I'm running 550's to compensate (I know, I know, I will get a safc and afpr soon). My question is if I get a 3G maf will it be able to run as the current setup? Or is it too rich/lean with the 550's?

550's & a 2g mas will all but cancel each other out. swapping to a 3g mas will probably put you lean.

Is there any way outside of getting a safc that I can compensate for that?

short answer, No. you need to be able to comp for maf & injector size at the ecu. any other method will give you unstable results or in other words rich at one rpm throttle point lean at others.
