Fan switch

Hello guys just a little back ground i recently had a leaky radiator so I took a chance at the ebay specific GVR4 radiator click by ofcourse wasnt a bolt on affair a little to tall and the fan switch that goes by the lower radiator hose doesnt even fit in the hole LOL but anyways i left the hole plug up with the cap it came with and i also put 2 new pucher fans on a swith while I find a tap for the right size fan switch. But anyways i was bleeding the coolant and all the sudden the fans came on (keep in mind the car has no fan switch) any ideas what else would make them come on?

Any help is gladdly appreciated

When the sensor in the back of the t-stat housing sees that the temperature is in the neighborhood of 210* then that sensor turns both fans on full high. Its kind of like an emergency override.
