Best fan temp switch

I have been having trouble with my galant overheating and I was wondering on what to do for an after market temp switch. I put one that I got from the parts store in but it is just a probe you stick into your rad. and it doesnt work very well the fans turn on great at 200 but they do not turn off until temp is around 175 which takes forever and annoys me. Have one slim fan and rewired the pull fan on the turbo side.

P.S. The reason I am doing this is my friend did a wire tuck and messed the fan wires up beyond repair.
