will the the steering rack get damaged if i don't use power steering fluid and just drive it like a manual rack? i have a really bad leak, and will have to drive it without fluid for a couple days.

Is the leak coming from the four wheel steering lines? you can easily cap/plug those lines. Yes you can drive it as a dry rack, but it would be best to remove the pump and belt that way you don't burn up the pump and possibly snap the belt.
 

Isn't there a front pump and a rear? Which one is this hard on, or is it hard on both?

Just take the P/S belt off. It takes 20 minutes and will prevent all damage. There is a rear pump, kinda. It will ruin your front pump though. It's going to be running dry and will eventually seize and take the belt off by itself. Just take the belt off and your fine. Just remember parking lot turns will require both arms so stay off the phone.
