1 ton hoist - high enough?

It should. Thats 6.5 ft and unless your car is on some big ass jackstands then you wont have an issue. Just make sure you use a short chain.
 

Should be i pulled my motor and transmission last weekend, and did it on the 3/4 of a ton setting.

if you want to do it as easily as possible, get two good floor jacks, take the front wheels off, and then lower the car almost down to the brakes (lower than stands) once you're ready to pull the motor. I'm not super tall so it makes it a lot easier
